8 **Crisp the socarrat and rest.** Increase heat to medium-high for the final 1–2 minutes to crisp the bottom, listening for a light crackling sound. Remove from heat, cover loosely with foil, and rest 5 minutes.

Note
- Resist stirring once the rice and stock are combined — unlike risotto, paella is left mostly undisturbed so the bottom layer can develop socarrat.
- Listen (rather than just look) for socarrat forming — a light crackling or popping sound in the final minutes is a good sign the bottom is crisping properly.
- Use the widest, shallowest pan you have; a wide surface area is key to getting the rice in a thin, even layer that cooks properly.
